To economically harness yeast remnants and alleviate environmental impact, Cervecería Polar founded Prosana, a Productora de Saborizantes Naturales, C.A. The primary goal was to extract, dry, and pulverize yeast extract remnants from its four breweries for resale in various food applications, including cheese making.

Initially, excess alcohol accompanying yeast from fermentation was evaporated to eliminate the need for explosion-proof equipment in the following processes. Subsequently, the extract was separated using centrifuges, concentrated, and finally dried.
